Karikkappam

KARIKKAPPAM OR TENDER COCONUT APPAM OR TENDER COCONUT DOSA

Karikku means Tender Coconut in malayalam. This Breakfast bread is made out of Tender coconut and raw rice. This is a very fluffy kind of a dosa. It is very tasty and healthy also as we are not using yeast in this. Tender coconut is well known for it property to cool the body. It is also known to kill intestinal worms. It is very good source of B-Complex vitamins. Hence a recipe with so much health benefits makes our breakfast great, isn't it?. Today lets see how to make Karikkappam or Tender Coconut Appam.


Karikkappam with egg roast

Ingredients :

 1.
Raw Rice 
 2 cups
 2.
Tender Coconut Pulp
Pulp of One tender coconut 
 3.
Tender Coconut Water 
Water of One tender coconut 
 4.
Sugar 
1/4 cup 
 5.
Salt 
as reqd 
 6.
Water 
as reqd 
 7.
Gingelly Oil 
as reqd 

Preparation :

  • Soak raw rice for 4 - 5 hrs.
  • Take the water of one tender coconut and keep it ready.
  • Take the pulp of that tender coconut and keep it ready.



Cooking Method :

  • Coarse grind the soaked raw rice in a mixer-grinder adding very little water. You should be able to see small rice granules in the batter. Keep this coarse ground rice batter aside.
  • Take 2 tablespoon of this course ground batter in a vessel. Add one cup water to this and mix well.
  • Boil this mixture continuously stirring untill the mixture becomes thick.Keep this thick mixture aside. We call this form of the mixture as kurukku.
  •  Now coarse grind the tender coconut pulp in a mixer-grinder and keep it aside.
  • Add the tender coconut water to the remaining coarse ground rice batter and grind it to a smooth batter.
  • Add this to the coarse ground tender coconut pulp and mix well.
  • Add sugar, salt and the kurukku to this batter and mix well. The thickness of the batter should be that of the dosa batter consistency.
  • Keep this batter for fermenting for 12 hrs.
  • The batter will not rise, but it would have got fermented.
  • Heat a dosa tawa. 
  • Grease some gingelly oil on the tawa.
  • Pour one laddle batter into the tawa and do not spread it.
  • Smear some gingelly oil to the sides of the appam and close the tawa with a laddle.
  • Wait for half a minute and turn the appam and cook the other side.
  • Take the appam from tawa and place it in the serving dish.


Hot, Fluffy and a little sweet karikkappam is ready to be served. This appam tastes best with :
Egg Roast
Chicken Roast
Chicken Varutharacha Curry
Onion-Tomato-Green Chilly Chutney etc.
