Paalappam

PAALAPPAM OR COCONUT MILK APPAM

Paalappam is a very famous breakfast dish  prepared in kerala. This is a breakfast bread made of rice batter and coconut milk. The whole process requires a little effort. But I assure, when you taste it, you would feel its really worth the effort taken. Today lets see how to make yummy paalappam.


Paalappam with vegetable stew

Ingredients :

 Raw Rice
 3 cups

 Cooked Rice
 1 1/2 cups

 Grated Coconut
 1 1/2 cups

 Coconut Water
 1/2 cup (one day old coconut water)

 1 tablespoon

 1 cup

 Coconut Milk
 1/2 cup

 Sugar
 4 tablespoon (as per your taste)

 Baking Soda
 a pinch
 10
 Water
 as reqd

 Salt
 as reqd

 Gingelly Oil
 as reqd


Preparation :

  • Retain the water from the coconut when you break it. Keep this water in room temperature for 1 day.Use this coconut water for making paalappam.
  • Soak Raw rice for 4 - 5 hrs.
  • Mix yeast and 1 tbsp sugar in half cup Luke warm milk and keep it aside for 15 minutes. 

Cooking Method :

  • Grind together soaked raw rice, cooked rice, grated coconut, coconut water and yeast-milk mixture to a smooth batter. The consistency of the batter should be that of a idly batter(Thick Consistency). 
  •  Keep this batter for fermenting for atleast 10 hrs. The batter will rise and become double the original volume.
  • After 10 hrs mix the batter well. 
  • Add salt, baking soda, coconut milk, rest of the milk and sugar, and mix well.
  • If you want a little sweeter appam, you can add more sugar at this stage.
  • Keep this aside for half an hour.
  • Now the batter is ready for making appams.
  • Heat an appachatti and pour one ladle of the batter and rotate the appachatti so that the batter takes a circular shape.
  • Now pour a little more batter in the center and smear some gingelly oil on top of it.
  • Close the appachatti with a lid and cook for 1 minute.
  • Need not cook the other side of the appam. Take the appam from appachatti and place it in the serving dish.
                           
Hot and crispy paalappam is ready. The best side dish for palappam are :
Coconut Milk with Sugar
Vegetable Stew
Egg roast
Chicken Roast
Chicken varutharacha curry etc.
