Colourful paneer tikka

COLORFUL PANEER TIKKA

Ever since I posted  the pictures of my 2017 New Year's dinner, I had been getting a lot of mails asking for the recipe of the dishes in it. So here it goes, after a very long break, Malabar Flavors is back with a lot more exciting recipes. Keep watching this space for more.

Now back to the colorful  paneer tikka, it is a starter dish. Putting it in simple words, we marinate the paneer or cottage cheese in two different color  masalas and spice it up with colorful bell peppers. As you all know paneer or cottage cheese is a very good source of calcium and protein. Women cannot give up on Paneer because it is very very important ingredient for their bone strength.Without much intro I ll straight away move into the recipe.





Ingredients:


1. Paneer/ Cottage Cheese - 200gm
2. Yellow Capsicum - 1 No.
3. Red Capsicum - 1 No.
4. Oil - For Shallow frying
5. Toothpick - for arranging the tikkas.

For Red Masala :


1. Kashmiri Chilli Powder - 1 Tablespoon
2. Ginger Garlic Paste - 1 Tablespoon
3. Garam Masala - 1 teaspoon
4. Chat Masala - 1/4 teaspoon
5. Salt - as reqd.
6. Water - as reqd.

For Green Masala :


1. Green Chilly - 2-3 Nos. (depending on your spice buds)
2. Garlic - 2 -3 Nos.
3. Ginger - 1 inch size
4. Coriander leaves - 2 Tablespoon (chopped)
5. Mint Leaves/Pudina - 2 Tablespoon (chopped)
6. Lemon juice - 1-2 Tablespoon
7. Salt - as reqd.
8. Water - as reqd.

Preparation :


  • Cut the paneer into small cubes and divide into two halves and keep it in two separate bowls.
  • Cut the capsicum  into small cubes of the same size of paneer and keep it aside.
  • Take the ingredients for Red Masala in a bowl and make a thick paste of it adding very little water. The paste should be thick so that the paneer gets coated in it well.
  • In a blender, take the ingredients for Green Masala, except lemon juice and blend it to a smooth thick paste. Transfer the paste to a bowl and add lemon juice and mix well. 
  • Take one bowl of paneer and marinate it with the red masala.
  • Take the other bowl of paneer and marinate it with the green masala.
  • Now Marinate the capsicum in the left over masalas lighltly.
  • Refrigerate the marinated paneer and capsicum for one hour.
                               

Cooking Method :


  • Heat some oil in the pan. We just need to shallow fry the paneer. So just add 2- 3 Tablespoon of oil.
  • Now add the marinated paneer batch by batch and fry it lightly in low flame . The masala should get cooked but should not get burnt. Hence I suggest to fry it in low flame. 
  • Once all the paneer has been fried in the way mentioned above, add the marinated capsicum and fry it for just one minute and put off the stove.
  • Once the paneer and capsicum is cool, we can start arranging it in toothpicks.
  • Take a toothpick, pierce an yellow capsicum,fried red paneer, fried green paneer and  red capsicum. 
  • Repeat the above step for all paneers. You can go creative by mix and matching the colors.
  • Now arrange all the paneers with toothpick in a serving dish. 
  • Microwave this for one minute just before serving.
  • The colorful Paneer Tikka is ready.
This is a perfect starter dish when you plan for a party at home. Paneer doesn't have much cooking time. Hence quick and easy to prepare.
