VEGETABLE BIRIYANI
Biriyani is a rice based dish usually made using basmathi rice. It is dish that was originated in Turkey and was brought to india by the Muslim travellers. As you all know, Muslims are well known for making delicious biriyani. In india, we have a variety of biriyani specific to each region and community. Here I am sharing with you a very simple and basic recipe for vegetable biriyani. So, lets see how to make this delicious biriyani.

Preparation :
- Wash jeera rice nicely till all the starch is gone.
- Clean and take out the florets from cauliflower.
- Boil Cauliflower florets in some water along with salt for 3 minutes.
- Then wash the cauliflower florets in cold water.
- Boil cauliflower florets and green peas in some water along with salt and turmeric powder for 5 minutes or till its cooked.
- Cut the other vegetables into cubes and keep it aside.
- Grind the ingredients for grinding and keep it aside.
- Finely chop coriander leaves and pudina/mint leaves and keep it aside.
- Boil 4 cups of water and keep it ready

Cooking Method :
- Heat some ghee + oil in a kadai or cooker.
- When its hot, put the chopped onions and saute till the raw smell of onion goes.
- When onion is almost done, add the ground paste and saute well till the raw smell goes and oil starts leaving the sides.
- Add the vegetables and mix well.
- Now add tomatoes and mix well till the tomatoes are smashed.
- Add the chopped coriander leaves and pudina leaves and mix well.
- Add the rice and mix well so that the masala gets coated well on the rice.
- Add the juice of one lemon and mix well.
- Add the boiling water to the rice-vegetable mixture and mix well.
- Add salt and mix well and close the cooker and cook the rice.
- When the rice is cooked, add the cooked cauliflower and green peas to this and mix well.
- Heat some ghee in a pan and saute the bread slices till golden brown.
- Garnish the biriyani with sauteed bread slices and coriander leaves.

- Serve this with Raita and papad.
